It doubles up the input work when using composer. Probably not made to be used with it.

Is there anyway it can just read the entry field without having to add entry data every time?

True, it's not made for the composer.

You have to have data to show in the list, to search and order by. What you can do is to customize your block, so it's using the actual blocks data for the entry data. You do this by using the model classes I provide with the add-on.
You can also build an automatism, which creates an entry at creation of a certain page type.

So it wont allow me to assign external authors to create new pages/stories based on template page types?

It's a block. It acts like any other block. It doesn't control in any way the permissions you give to pages or page types.

I'm sorry I thought it was something I could create a news/blogging system with where authors could add content remotely. Obviously I was wrong. Thanks anyway.
