I have downloaded the theme and according to concrete5 it has been installed but is not available to apply in the pages/themes list.
I have tried manually removing it and adding again to no avail.
Any ideas ?

Have the same issue.
Installed 5.7.3.1, then installed Fruitful v1.1.1. Activated the theme via Dashboard, but no change. I also tried a manual install, still no change.

To anyone having this issue - please PM me your CMS user/pass, and FTP information and I'll see if I can help.
Copy and Paste the theme to Application -> themes directory and then activate from dashboard.

What happens if I update the theme ? Will all customization will be deleted ? or they will remain same. ( If I activate theme as per your suggestion )
Yes. If your intentions are to modify the theme files, duplicate it into applications.
If you're planning to leave the theme files alone, then always leave it in the package rather than breaking up the components into the application

I haven't seen any resolution to the underlying problem. I just added the unzipped folder to the packages directory, but it doesn't appear in the Add Functionality page. What is the proper way to install the whole thing?

also did you follow the instructions with the theme ...
# Installation Instructions
1. Unzip this file in your site's packages/ directory.
2. Login to your site as an administrator.
3. Find the "Add Functionality" page in your dashboard.
4. Find this package in the list of packages awaiting installation.
5. Click the "install" button.
